Noodles with Roast Pork and Almond Sauce

Noodles with Roast Pork and Almond Sauce.  This Cooking Light recipe did not disappoint!  It is actually a pretty quick recipe....the pasta and sauce  can be made while the pork is roasting.  My pork was a little well done.  I need to trust my thermometer and quit overcooking my meat!  This would be equally good with chicken.  10 Weight Watchers Smart Points for the meal.

New England Turkey Burgers

New England Turkey Burgers from Cooking Light.  These are called New England burgers because they call  for the onions the be simmered in Sam Adams beer  and are topped with Vermont white cheddar cheese.  I could not find the beer in my area so I subbed  Sierra Nevada Tropical Torpedo IPA which was supposed to be similar.  I also could not find Vermont white cheddar cheese  but still wanted something special so I used  Kerrygold Skellig Sweet Cheddar Cheese.  Despite all the changes, these burgers were still delicious!!!!  Who knew turkey burgers could be sooooo good!  When I make these next time I will skip all the running around  looking for the correct beer and use something I can buy at my usual store instead. Served with a side salad. 15 Weight Watchers Smart Points for the meal.

Rosemary-Fig Chicken with Port.  This Cooking Light recipe was very good and pretty quick to make.  My sauce was on the thick side and the fig preserves were too sweet  so I thinned it out a bit with some chicken stock.  Served with spiralized sweet potatoes and a side salad.  16 Weight Watchers Smart Points for the meal.

BBQ Chicken Pizza with Fresh Mozzarella and Pickled Jalapeños.  So good, so quick, so easy!  I used fresh jalapenos since I don't usually have pickled on hand.  This is one of the best pizza recipes Cooking Light has....but I believe   have said that about every pizza I have tired!  9 Weight Watchers Smart Points per slice, 1/8 pizza.

Chicken and Broccoli Fettuccine Alfredo

Chicken and Broccoli Fettuccine Alfredo. My daughter really wanted chicken and broccoli alfredo  so I modified this sauce recipe from Cooking Light. It was very tasty, I will definately make this again! Believe it or not, that is only 2 oz of uncooked pasta!   The broccoli really bulked up this meal, making it very filling. 12 Weight Watchers Smart Points for the meal.

Fennel and Clementine Salad with Chicken, Almonds, and Feta

Fennel and Clementine Salad with Chicken, Almonds, and Feta. This huge dinner salad would be great on a sunny warm evening. The grilled chicken, watercress, salad greens, fennel,  clementines, almonds, and feta all taste great together. The yellow things that look similar to pineapple slices  are Parmesan Polenta Rounds which would need some  major modifications if I were to make again! Recipe from Cooking Light. 13 Weight Watchers Smart Points for the meal, 9 if you skip the polenta rounds!

Sausage, Cannellini, and Tomato Ragout. This was very good and flavorful.  Served on brown rice but mashed potatoes  or polenta would also be good.  There were no leftovers, darn it! Next time I'm going to double it!  Sides were Kale Salad with Creamy Peppercorn Dressing and roasted asparagus.  Recipes from Cooking Light.  11 Weight Watchers Smart Points for the meal.

Raspberry Almond Linzer Muffins from Cooking Light.  These are sooooo good and just earned the top spot on my favorite muffin list!  Served with fresh berries and black coffee.  7 Weight Watchers Smart Points each.
