Cookbook Review: Christmas with Southern Living 2022, Mini Meatloaves with Winter Vegetables

  Mini Meatloaves with Winter Vegetables from page 93 of Christmas with Southern Living 2022. Red potatoes, brussels sprouts, and leeks are mixed with a delicious tangerine and garlic dressing and roasted alongside mini meatloaves made with both ground beef and sausage. This dinner was quick and easy and made the kitchen smell amazing as it baked. There wasn't a lot of hands-on time which allowed me to relax as it baked, making it a great recipe to serve guests. The entire meal was 16 WW points, which could be lowered by reducing the amount of olive oil or by subbing turkey sausage for pork. I was gifted a copy of this cookbook from Abrams Books as a part of the Abrams Dinner Party. Christmas with Southern Living 2022 is filled with creative ideas for decorating, entertaining, and handmade gifts for the holidays (and year-round!) as well as make-ahead cooking tips and other ideas to take the pressure off hosting and instead put the focus on family and friends. Chicken-Parmesan Meatballs

Chicken-Parmesan Meatballs from page 35 of the Southern Living 2021 Annual Recipe Cookbook. I was gifted a copy of the Southern Living 2021 Annual Recipe Cookbook last year from Abrams Books as a part of the Abrams Dinner Party. I have loved every recipe I have made from it, but this recipe is my absolute favorite! I love Chicken Parmesan and these meatballs are much easier than the traditional breaded chicken version. Ground chicken, basil, breadcrumbs, eggs, spices, and parmesan cheese are mixed together and formed into meatballs. The meatballs are browned, a quick sauce is added, cheese gets piled on and it all gets delicious as it bakes in the oven. I served the meatballs over spaghetti with some extra parmesan and a side salad. The entire meal was 13 WW points, which could be lowered by cooking the meatballs with less oil and reducing the amount of cheese. Congratulations Dustin and Emma!

💗 Earlier this year my son, Dustin, went on a spontaneous cross-country road trip, winding through the western, northern, and eastern states. He then turned south and shortly after he arrived in Florida he met an amazing girl, decided to stay there, and has been absolutely smitten and giddy ever since. We are so happy that he and Emma have decided to get married!  Congratulations to Dustin and Emma!!! 🥂💕

Moroccan Chickpea-Stuffed Acorn Squash

Moroccan Chickpea-Stuffed Acorn Squash from page 74 of The Mediterranean Table by Weight Watchers. This was a delicious side dish made with seasonal acorn squash from my local produce market. The squash is cut in half (I cut mine in the wrong direction but I really don't think it matters!), cleaned, and roasted. It is then stuffed with a sautéed and spiced mix of onions, chickpeas, raisins, and toasted sliced almonds. A delicious blend of flavors, sweetness, and crunch! Cookbook Review: What's Gaby Cooking: Take it Easy by Gaby Dalkin

I have been doing *a lot* of cooking from the newly-released cookbook "What's Gaby Cooking: Take it Easy" by Gaby Dalkin ever since I was gifted a copy from Abrams Books as a part of the Abrams Dinner Party. This cookbook contains easy recipes that can easily and quickly be pulled together for weeknight dinners and low-key entertaining. Here are just a few of the recipes I have made so far: Perfect Banana Bread, page 23: Cheesy Hamburger Helper Style Pasta, page 46: Brussels Sprouts and Brie Gratin, page 174: My favorite recipe from this book, Thomas's Tri-Tip Sandwiches with Onions and Melted Cheese, page 132: Korean BBQ-Inspired Meatloaf, page 99. This tasted much better than it looks! Creamy White Beans, page 166 BBQ Chicken Chopped Salad, page 62. This salad is very quick and just involves cutting up the salad components and could be even quicker with bagged salad mix, pre-cut produce, and bottled dressing. French Onion Soup

French Onion Soup from the New Best Recipe cookbook by Cook's Illustrated. America's Test Kitchen and Cook's Illustrated tried many techniques before they mastered this perfectly balanced recipe that cooks in about an hour. Red onions are caramelized and then simmered in chicken broth, beef broth, and wine. Individual portions are topped with slices of baguette, Swiss cheese, and a bit of grated Asiago. YUM!
